Grilled Cabbage and Lime Dressing

Cabbage is a sweet, yummy under used vegetable! This is just the right season for it as just a little bit of cold tends to make this hearty veggie a little sweeter.
1/4c lime juice
1/4c olive oil
2-3 minced garlic cloves
1/4c cilantro leaves
dash of cayenne
1/4tspn agave or honey
1 head green cabbage
Grapeseed oil
sea salt and pepper, to taste
Start your grill, if you do not have one available preheat oven to 350. Whisk lime juice, olive oil, garlic, cilantro, salt, cayenne and agave together, set aside.
Peel outer leaves from the cabbage, and cut into either 4 or 8 wedges. Do not remove the stalk or inner core. Lightly brush the wedges with grapeseed.
Place the wedges on the grill and cover, or wrap in tinfoil and place in heated oven. Cook for 5 to 7 minutes, or until the edges of each layer are blackened and the cabbage is beginning to soften. Flip each wedge over, cover the grill, and cook for an additional 5 to 7 minutes on the other side, same in oven. Remove the cabbage when it is beginning to wilt, but is still firm in the middle.
Once the cabbage is grilled or cooked to your liking, serve with dressing and enjoy!
