recipe WEDNESDAY: Asparagus Fries

Asparagus Fries






Now we aren't advocates of "sneaking" vegetables into a kid's diet but if you tell them its a _________ (any vegetable) fries they are much more excited, right? For kids and picky eaters alike, this is a great way to enjoy a yummy spring vegetable in a whole new way! Experiment with different dips just to make things interesting!



1 pound asparagus, trimmed
1/2c gluten free flour (we recommend something like Bob's Red Mill All Purpose Gluten Free Flour)
2 beaten eggs
3/4c breadcrumbs (made with toasted Udi's Gluten Free Bread)
1/4c grated Pecorino Romano cheese
sea salt and pepper to taste

Dredge the asparagus in the flour, dip in the beaten eggs and then into a mixture of bread crumbs, cheese, salt and pepper. Place asparagus in a single layer onto wire rack on a baking sheet. Bake at 425 until golden brown and crispy, 10-13 minutes approximately.
