recipe WEDNESDAY: Lemon Chia Pancakes

Lemon Chia Pancakes with Roasted Strawberries



Talk about trends in food....chia seeds are having their moment! This ancient South American staple is rich in nutrients and antioxidants. They make a great addition to this zesty, light spelt pancakes. Top them with fresh roasted strawberries for a healthy breakfast that only feels indulgent!

2c spelt flour
1tbsp raw honey
zest of 2 large lemons
2tsp baking powder
1tsp baking soda
1/2tsp sea salt
2c heavy cream or hemp milk
2 eggs
1tbsp lemon juice
1tsp vanilla
1/4c chia seeds

2-3c diced strawberries
1tbsp additional lemon juice


Preheat oven to 350. Toss diced strawberries in lemon juice and spread on baking sheet. Roast for 15-20 minute. While they are cooking, whisk together all pancake ingredients, adding dry ingredients to wet mixture. Oil a heated pan and begin cooking pancakes  as you normally would. Top with roasted strawberries.
