If you've never braved fennel before, we highly recommend taking the jump with this recipe! Roasted to perfection and just the right seasonings make this a great fall side dish.
2 bulbs of fennel
1.5tsp curry powder
1tsp paprika or chili pepper
Salt-to taste
Preheat the oven to 425 degrees. Slice stalks off of cleaned fennel bulbs (you can save them to use in another recipe if desired) then slice fennel to about 1/4' thick from top to bottom. In a greased baking sheet arrange the sliced fennel and sprinkle olive oil and seasonings on top. Bake for 20 minutes, flipping halfway. Serve immediately.
