Green Detox Soup
2 tbsp coconut oil
3 cloves garlic, minced
3 zucchinis, sliced
2 c green beans, chopped
1.5 c peas
1.5 c broccoli florets
5 c vegetable or beef stock, homemade
3 tbsp fresh mint
2 sprigs fresh thyme
sea salt and pepper, to taste
Place coconut oil in large stock pot and melt. Add garlic and cook till softened. Add vegetables and cook for several minutes. Stir in stock, mint and thyme. Bring to a boil, then reduce to a simmer for 30 minutes. Puree the soup in a blender or using an immersion blender until smooth.
