1tbsp olive oil
2 leeks
2-3 celery stalk
2-3 carrots
3 chicken breasts
6c homemade chicken or vegetable broth
Sea salt and pepper to taste
1/2c dry orzo
1/4c fresh dill, chopped
juice of 1 lemon
In a large pot, heat up olive oil over medium heat. After rinsing and chopping leeks, celery and carrots add to pot. When vegetables become slightly soft, add chicken and broth and season with salt and pepper. Bring the soup to a boil then reduce heat, and let simmer until chicken is cooked. When chicken is cooked, take each piece out and dice into bite size pieces. Add orzo to pot, cook for approximately 10 minutes. Remove from heat stir in chicken. Top with fresh dill and lemon juice then serve.
