1 small head cauliflower
1tbsp olive oil
1 clove of garlic
½tsp sea salt
Trim cauliflower to the florets. Using a food processor, grate the cauliflower using. Heat the oil in a large pan, add garlic and cook to slightly softened. Add the cauliflower and cook, stirring occasionally, until the cauliflower rice is tender and slightly golden brown, about 6-9 minutes.
Season with salt.
