recipe WEDNESDAY: Whole Roasted Chicken

Whole Roasted Chicken



We are big fans of simplicity in our meals. Make it easy, organic and yummy and we are happy campers! Especially all in one pot? Even better! This chicken can be done a million ways to incorporate different tastes, vegetables, seasons and palates! We have found the key to this recipe is a dutch oven and a meat thermometer....making this recipe just about fail proof!  Bon Appetit!




1 organic whole chicken, rinsed
Organic olive oil
Salt and pepper to taste
2-5 organic garlic cloves
1 organic lemon, halved
Organic vegetables, fruit and herbs  (see recommendations below)



Preheat oven to 400 degrees.
Line dutch oven with selected vegetables, fruit and herbs. Sprinkle olive oil, salt and pepper on top and mix through. Place chicken on top, drizzle with olive oil and seasonings. Stuff the chicken with lemons. Place meat thermometer through chicken. Place lid on dutch oven and cook for approximately an hour, checking the thermometer. When the chicken has reached its proper degree of cooking, take out of oven and let sit, covered for about 20 minutes to lock in juices.
