Crunchy Cabbage Peanut Slaw
This crunchy salad is a great to accompany dinner or for a great lunch. Make sure that you use only organic peanuts for optimal nutrition!
2 cups organic cabbage or bok choi, chopped
1/2 cup organic carrots, chopped
1/2 cup snow peas
1/4 cup organic olive oil
1/4 cup organic apple cider vinegar
3 tbsp soy sauce
3 tbsp honey or maple syrup
2 tbsp organic peanut butter
2 tbsp organic peanuts, crushed
*optional- top with chicken or cilantro
Mix vegetables. Separately mix all liquid ingredients. Pour over vegetables and mix thoroughly. Top with peanuts.
