Peanut Butter Quinoa Cookies
School is right around the corner, hard to believe right? Why not try this healthy treat in your kids lunch or even in your own! Satisfies the sweet tooth and packs in omegas and protein with quinoa!
2 c cooked quinoa
1/2 c peanut butter, either smooth or chunky
3 tbsp maple syrup
1/4 tsp sea salt
3/4 c oats
1/2 c unsweetened, shredded coconut, optional
1/2 cup chocolate chips
Preheat oven to 350 degrees. Combine cooled quinoa, peanut butter, maple syrup, salt, and oats in a large mixing bowl. Mix thoroughly. Stir in coconut and chocolate chips. Roll a scoop of mixture into balls, place on lined baking sheet. Bake for about 20 minutes. Cool before storing.
