recipe WEDNESDAY: Kale and White Bean Soup

Kale and White Bean Soup


 
 

It's hard to believe... we are heading into fall. Cooler weather, shorter days and summer time veggies winding down. Lucky for us, the super food kale only gets better in these cooler months! Check your local farms and markets as it will be popping up all the fall greens, squashes and root vegetables. This hearty soup screams fall! Pour yourself a hearty bowl and settle in for the beautiful change of season right around the corner.
 
 
2tbsp olive oil     
1c  diced leeks
4  minced garlic cloves    
4c vegetable, chicken or beef broth, homemade is preferable  
4c  chopped kale     
2c soaked cannellini beans     
2c diced carrots     

2c cooked chicken or turkey sausage, optional
 
 
In a large saucepan, heat olive oil. Add leeks and garlic and cook until softened. Add broth, kale and carrots and cover. Cook 5 minutes or until kale is tender. Add beans and cooked sausage, simmer for 5-10 minutes. Serve hot.
