recipe WEDNESDAY: Beet Chips and Goat Cheese Avocado Dip

Beet Chips & Goat Cheese Avocado Dip


 
Found yourself craving a salty snack? This is a great way to substitute out potato chips and replace with an even better alternative! It makes a great take along side to those holiday parties just around the corner! Make sure to get local, organic beets when possible.


3-4 large beets
2 tbsp olive oil
salt and pepper to taste



1 large avocado
2 oz of goat cheese
1/2 tsp minced garlic
2 tsp lemon juice
salt and pepper to taste





Preheat the oven to 350. Slice the beets into thin slices.  Toss with the olive oil and salt and pepper. Lay beets into one single layer on a baking sheet.  Bake for 15-20 minutes until crisp.  

For dip, combine all ingredients well and serve.
