recipe WEDNESDAY: Kale and Quinoa Patties

Kale & Quinoa Patties







These yummy little patties make for a light lunch or a great snack! They are easy to make ahead and store, a perfect on the go snack. The combination of quinoa and kale make them a super food!








2c cooked quinoa, slightly cooled
1c gluten free bread crumbs (it is best to just make your own)
4 eggs, beaten
1c chopped leeks
1c finely chopped kale
2-3 cloves finely chopped garlic
1tspn baking powder  

1/4c pecorino romano
cumin to taste
sea salt and pepper to taste
Olive oil

1 sliced avocado
Juice of lime



After quinoa has cooled, mix all ingredients together in large bowl. Coat olive oil in skillet, bring to medium heat. Scoop a small handful of mixture and gently mold into a ball. Drop into skillet. Cook until bottom is crispy, then flip. Top with avocado and drizzle with lime juice.
