Lemon Salmon with Dill Sauce
A light dinner that incorporates lemon and dill sounds like a perfect summer meal! It is important to buy quality fish, nothing farm raised. This is so simple to put together for a quick meal or plates beautifully for guests.
4 fresh salmon fillets, not farm raised
2tbsp olive oil
zest of 1 lemon
2tbsp lemon juice
sea salt and pepper to taste
1/3c fat plain goat yogurt
3tbsp safflower mayonnaise
1-2 cloves of minced garlic
1tbsp chopped fresh dill
1/2tsp honey
sea salt and pepper to taste
Preheat oven to 400 degrees. In a bowl, whisk together olive oil, lemon zest and lemon juice. Grease a 13 by 9-inch baking dish and place salmon fillets in baking dish. Season tops of salmon with salt and pepper then rotate to opposite side. Drizzle tops evenly with lemon mixture and gently rub over salmon, then season tops with salt and pepper. Bake for 12 - 16 minutes. While salmon is baking, combine ingredients for dill sauce. Top sauce on salmon after it has been baked.
