Honey Lemon Quinoa Stuffed Sweet Potatoes

This combination of sweet and savory is delicious! It can also serve as a light dinner or great side dish.
4 medium sweet potatoes
1c uncooked quinoa
2c chicken broth
1tbsp olive oil
2 minced cloves of garlic
1c black beans
1/2 tsp cumin
1/2 tsp paprika
1/8 tsp caynenne pepper
juice of 1 lemon
3tbsp honey
sea salt and pepper to taste
2tbsp chopped cilantro
4 slices of either Petit Basque cheese or Manchego cheese
Place cleaned and pierced sweet potatoes in preheated oven at 400 and bake for 40 minutes.
Meanwhile cook broth and quinoa in a saucepan until liquid is absorbed. Add garlic, beans, cumin, paprika, cayenne pepper, lemon juice, honey, salt and pepper. Mix well.
Half baked sweet potatoes and use a fork to fluff insides. Top halved sweet potatoes with quinoa mixture and lay cheese on top. Cook additionally until cheese has melted. Top with chopped cilantro.
