recipe WEDNESDAY: Butternut Squash Chicken Chili

Butternut Squash Chicken Chili



Warm and comforting, this recipe hits all the high notes! It is so easy to prepare ahead of time making it a super simple, delicious dinner!



1lb chicken breast, diced
1 large butternut squash, peeled and cubed
2c kale leaves, chopped
2c cannellini beans
1tbsp olive oil
3-4 garlic cloves, minced
1 1/2c chicken broth
1/2c heavy cream

3/4c  cooked quinoa
1/4c pecorino romano cheese
dash of cayenne pepper
sea salt and pepper to taste




Add all ingredients to crock pot. Cook on low for 2-3 hours. Once cooked thoroughly, mash some of the butternut squash till you reach desired consistency.
