recipe WEDNESDAY: Loaded Nachos with Avocado Cream Sauce

Loaded Nachos with Avocado Cream Sauce



This is a great alternative to a common junk food craving. Lots of great alternatives to make this an acceptable specialty snack!

Nachos
1/2 bag of organic corn tortillas
3/4c shredded Manchego cheese
1/2c soaked and rinsed black beans
2 small chopped hot peppers, optional
2tbsp chopped chives
Sea salt and pepper to taste


Avocado Cream Sauce

2 ripe avocados
1/2c sour cream (made from heavy cream only)
juice from 1/2 lime
2tbsp olive oil
2tbsp finely chopped fresh cilantro
sea salt to taste


Preheat oven to 350. Arrange the nacho ingredients by layering tortillas then additional ingredients on a baking sheet. Bake for 10-15 minutes, till cheese is melted. To make cream sauce, remove pits and skins from avocados. Add all ingredients to a food processor and blend well. Using spoon, drizzle avocado cream sauce over nachos. Serve immediately.
