Coconut Flour Zucchini Bread








1-2 small zucchini (enough to make 1 c shredded)
4 eggs
2 tbsp honey or maple syrup
1 mashed banana
1 tbsp coconut oil
1/2 c coconut flour 3/4 tsp baking soda
1 tsp cinnamon
1/2 tsp mutmeg
1/2 tsp Sea salt

Preheat oven to 350 degrees. After you shred the zucchini, allow the moisture to drain off. Whisks eggs, honey or maple syrup, oil, and banana together. Mix in all dry ingredients. Pour batter into a greased loaf pan. Bake for 45 minutes or until a toothpick comes out clean from center of the pan.
