Cauliflower Quinoa Stew
This stew is a perfect, easy crock pot meal! Easy to prep the night before and leave on low heat till you are ready for it the next day. We like to try different varieties with different vegetables or seasonings. Enjoy!
3tbsp butter
3 cloves of minced garlic
4-5 chopped carrots
1 chopped cauliflower
1c quinoa
3c homemade broth (vegetable or chicken)
2 raw chicken breasts
1c heavy cream
2 tspn Italian herb seasoning
Place all ingredients in crock pot and stir till well combined. Place on low heat for 4-5 hours. When chicken is cooked thoroughly, shred and then return to stew. Season again if needed.
